I swear if one more person posts a 'Yummy recipe' on Facebook they've never tried and I waste the time and money on it and it's horrible, I'm going to pack it up in a plastic bag, wait 3 days and then mail it to them to see what they really think about it! I'm serious. I don't get this trendy phenomenon of people, some of whom apparently are too lazy to cook anything more than a microwave hotdog, posting food they haven't made or tasted and pushing it like it's the best thing they've ever had, or at least seen. Of course anytime you see something trending somebody has got to come along and be an asshole about it, falsifying and/or creating new or bastardized versions of the recipes in hopes that they will land in the laps of unsuspecting victims, which is apparently what happened here as I found on the initial path to a crash and burn. The recipe that was posted was a brilliant recipe for Pumpkin Muffins using only a 15 Oz can of pumpkin and a box of yellow cake mix. Initially I was skeptical with the yellow cake mix because even though I haven't had it since my early parenting days, I still remember that awful flavor, but I figured that the pumpkin would overcome that, forgetting how bland raw pumpkin is. https://www.pinterest.com/pin/145663369173152646/?lp=true So I went full speed ahead, bought the ingredients, turned on the stove, and commenced to consult the recipe--but wait. The recipe called for the oven to be set at 325 degrees, and I know that virtually all cakes are baked at 350, and most muffins and pumpkin bread are higher, so I became skeptical, stuck with my instincts and set the temperature at 350, and I'm glad I did because had I not, they would have ended up as hockey pucks until they were finally baked. I then googled this recipe and was startled to find the first image that popped up was pumpkin and a SPICE CAkE MIX, and the bells and whistles went off. Some asshole switched out this recipe because Spice Cake made sense. Still here I was in the thick of things so I had no recourse but to stay the course and proceed and hope I wasn't right. But while the consistency of the muffins came out moist and firm, the flavor was horrendous for they tasted like hunks of the dreaded box yellow cake. GACK! But while taste wise they were unpleasant, they were edible if you were starving or suffer a lack of taste buds so I pawned them off on my sister who has a growing young man living with in her home. They eat anything. So not to be deterred I decided to try MY updated version of this easy alternative to Pumpkin Muffins and Pumpkin Bread which turned out to be phenomenal. So here it is: Set oven at 350 degrees. Mix 15 oz can of pumpkin, 1 box of Spice Cake Mix, 1 teaspoon Cinnamon, 1/2 teaspoon of Nutmeg and 1/2 teaspoon crushed clove. Mix with spoon till moist and drop in greased muffin tin or bread pan. I used a large tin and let it back for 22-24 minutes, let rest for 5 minutes until you flip onto cooling rack. They are PERFECT. In fact they are so awesome that I will now use this as my official Pumpkin Bread recipe and nobody but the two of us will ever have to know. In the collage below on the upper right side of the photo you can somewhat see how the muffins resemble cornbread versus my recipe below which gives them that golden brown pumpkin look, and still as incredibly moist as the nasty yellow cake version. So the takeaway here is that unless you are getting it from the source, always be skeptical of recipes circulating the internet because whenever I ask people if they have ever made the Pinterest recipes few if any actually had, and they just say, "Oh well I thought it looked good." But people that doesn't make it good anymore than if something looks unappealing doesn't necessarily mean it doesn't taste good, and yet one thing you can always take to the bank is that there will always be people out there who, either because they make mistakes or they intentionally changed it to be an ass, can potentially fuck up a pocketful of your hard earned money on a botched recipe.
