Today's Food Porn is about Getting Creative With Leftovers. Quite possibly my favorite meal to cook is a turkey with all the trimmings, not only because you can celebrate Thanksgiving any day of the year but also because the leftovers are yummy, delicious, nutritious, and potentially low cal. Many of you have seen many different dishes posted but what I have never shared with you is how thoroughly I utilize the leftovers literally getting dozens of meals out of one turkey and some ingredients including the carcass after it's been picked clean. After the meat is removed I throw the carcass including bones into a Pasta Pot/Strainer, fill with water and simmer for 2 hours. The broth becomes rich and full -bodied which you can't buy anywhere. I cool it and refrigerate it until I'm ready for soup. This time I decided to make a Turkey Bean and Spinach soup which I started by sauteing onions, garlic and shredded carrots in a Dutch oven. This time I decided to add a Mexican spin to it so I added cumin while sauteing. After 4 minutes I add the broth then 2 kinds of white beans, additional spices, diced tomatoes, spinach and turkey. It is just ridiculously yummy and you can probably eat the entire pot and still have less than all the calories allotted in a day. You can also do the same thing with chickens and other critters as well. It ain't over til it's over!
