Today's Food Porn is a sexy, delicious, nutritious meal that is so easy to prepare, your family will think you've been taking Chinese cooking lessons, and best of all takes less than 1/2 hour to prepare from chopping block to table. If you are a novice in the kitchen you can buy a pound of cooked diced chicken in the fresh meat section or use 1 lb--2 cups of leftover chicken from another meal. Do not use frozen meat. At expert level you can use fresh raw diced chicken, which I do, which has been marinating a few hours in half of my special sauce. This sauce is the key to Stir Fry greatness. It consists of 4 tablespoons of Sriracha Chili Sauce, 4 tablespoons Chopped Garlic and 4 tablespoons of Soy Sauce, which has just the right amount of zing. The veggies are the easy part because a rough chunky cut is all that's necessary. For this you can improvise using your favorite stir fry veggies but this time I used: 6-8 oz of Baby Carrots cut in half, Bok Choi, 1 large Onion, 1/2 lb of Sugar Snap Peas, a can of Bamboo Shoots and a can of Baby corn, sliced in half. First chop large pieces (about 1 inch) of carrots, onion and Bok Choi, using only the white part of the veggie. You can also substitute celery for this or add celery. Pour 2 tablespoons of cooking oil in very large fry pan or wok and heat to sizzling. Add baby carrots and cook for 1-2 minutes, stirring constantly. The pan will be spitting so don't cook while nude. Next add Bok Choi, onions, and snap peas, stir for 1 minute. If you're using raw chicken, now is the time to add it. If you are using cooked chicken you can wait 2 more minutes. Keep stirring, making sure the chicken is touching the bottom of pan and is cooking. After 2 minutes add the rest of the sauce, the baby corns and bamboo shoots. Keep stirring until chicken is cooked through, about 2-3 minutes. That is it. Just like at the Chinese Restaurant, your meal is cooked in 10 minutes and ready to serve with or without white or stir-fried rice. The result is a hot and spicy, crispy fresh and tasty vitamin and protein packed meal without the calories and carbs This meal is so tasty and so healthy that you even can have no guilt seconds. I also use zucchini, peppers, broccoli and mushrooms according to what's available for the season or to switch it up. The other upside is that cleanup is a breeze. All you have is a cutting board and frying pan to deal with.
