Upcycling Leftovers in Delightful Ways

Today's Food Porn is about Upcycling Leftovers in Incredibly Delightful Ways, this time by transforming leftovers from traditional Clambakes. Clambakes are a celebration in themselves. They celebrate the simple things in life: family, friends, festivities and an abundance of yummy foods. Clambakes are typically seasonal events which makes them extra special and eventful. Most traditional clambakes, in addition to clams feature corn on the cob, chicken, baby red potatoes or others, and onions. Everything is tossed into one gigantic steampot, first clams, then generously seasoned chicken, followed by the taters, onions and topped off with the corn. Don't forget the real butter which is heated up separately and served in dipping cups. Oh yummy. I can taste it already. However by their very nature of generosity and abundance there are always leftovers so the early pioneers of 20th century Delaware Bay figured out not only a great way to repurpose them but to also salve hangovers, and so voilà: Lower-Slower Delaware Breakfast. It sounds like yuck but boy is it yummy and yet fairly simple to prepare. During cleanup, slice leftover potatoes, onions and remove corn from cob. Then just combine leftover clams and deboned chicken. Since nothing goes to waste pour leftover melted butter over ingredients and stir. Afterwards refrigerate. In the morning, pour enough oil in large skillet to cover pan and when hot, just add the ingredients. Fry until you get a brown crust on the taters, then serve. It is delicious and filling; a great way to start a day filled with activities, or just recovering from the prior night's festivities. Calorie, carbs and fat count?
